Usually I mail out Thanksgiving Day cards, but this year I got caught up in a dispute with the post office over a lost order of stamps, and time got away from me. I don't know what my excuse was for not sending out Halloween cards, but something similar.
This is a fantastic pecan pie recipe that I tried this morning. It was much better than expected.
Brown Sugar Pecan Pie
2 eggs (room temperature)
½ cup (unsalted) butter, melted
1 cup light brown sugar
¼ cup white sugar
1 tablespoon all-purpose flour
1 tablespoon milk
1/4 tsp salt
1 teaspoon vanilla extract
1 cup chopped pecans
(+ more pecans if desired)
Preheat oven to 375 degrees F. (see note below)
In a large bowl, beat eggs until foamy, and stir in melted butter. Stir in the brown sugar, white sugar and the flour; mix well. Last add the milk, salt, vanilla, and nuts.
Pour into an unbaked 9-in pie shell (see note), and add additional nuts on the top if desired. Bake in preheated oven for 10 minutes at 375 degrees, then reduce temperature to 300 degrees and bake for 50 to 55 minutes, or until done.
(I pre-baked the pie shell and baked the pie at 350 degrees until I decided it was done. Didn't use the extra pecans.)
