Ingredients:
Water or chicken broth
2-3 thinly sliced chicken breast
3 star anise
1 1/2 oz hoi sin sauce
1 1/2 oz soy sauce
1 1/2 oz fish sauce
1 bulb garlic (minced or caramelize garlic)
1 teaspoon cayenne pepper
Chili paste (optional-we love it spicy so we put a lot so moderate accordingly)
Thai rice noodle or Yakisoba noodles
1-2 chopped jalapeno pepper
1 1/2 oz of white vinegar/Apple Cider Vinegar
3 tablespoons green onion
3 tablespoons cilantro
bean sprouts
Add 2 quarts of water or broth and star anise to a pot and bring to a boil. Add chicken and hoi sin, soy, and fish sauce, plus garlic, cayenne pepper, and chili paste (optional). Simmer on low heat for an hour. Add noodles. Cook till noodles are warm. In a small bowl, mix diced Jalapeno pepper with vinegar. Dish out soup and top with Jalapeno pepper mix, green onion, cilantro, and bean sprouts.
