Sun-fired Italian Vinaigrette

Makes 1 pint.

A dynamic Italian vinaigrette that is excellent on any crunchy salad.

1/4 cup sun-dried tomatoes
6 tablespoons organic extra-virgin olive oil
1/4 cup apple cider vinegar
1 tablespoon balsamic vinegar (optional)
2 tablespoons soy sauce (or nama shoyu)
1 tablespoon raw honey or maple syrup
2 clove garlic
2 tablespoons dried Italian seasoning
Pinch sun-dried sea salt, or to taste
Pinch chili pepper, or to taste (optional)

Soak sun-dried tomatoes in 1/2 cup fresh water until soft (5-15 minutes).

In a blender, blend sun-dried tomatoes and soaking water, olive oil, apple cider vinegar, balsamic vinegar (if desired), nama shoyu, honey or maple syrup, garlic, and dried seasoning until smooth. Season to taste with sea salt & chili pepper, if desired.


4.75 stars (Dale-5, David-4.5) very delicious...but didn't look great.

David made a salad of red bell pepper, manoa lettuce, carrots, snow peas and cucumber to go with it!
