Strawberry & Cream Milkshake

Makes 1-2 servings (for about 1 person).

Strawberries & cream in a milky shake is a dream. The beet brings a brilliant flush to this frothy blend.

1/4 cup whole raw cashews or raw macadamia nuts (raw cashew pieces can be used)
4 soft dates, or 2 1/2 tablespoons raw honey or maple syrup
1 tablespoon vanilla extract
1 teaspoon beet powder or 1 tablespoon shredded beet
1 1/2 cups fresh coconut water or apple juice
1 1/2 cups frozen strawberries

In a blender at medium, then high speed, blend nuts, dates (or honey or maple syrup), vanilla, beet, and coconut water or apple juice until super-smooth. Break apart frozen strawberries & blend in until smooth. Serve.

Dale's notes: We used raw cashews, dates, beet powder, & Coconut water from O.N.E. (didn't want to go all the way to Chinatown to get fresh coconut...maybe next time I do this I'll try). Very delicious and cold. Made enough for about 1 1/2 people so double recipe for more people.

Sounds very good. The beet powder sounds intriguing: does it have a flavor, or does it do more coloring than flavoring?

The beet powder didn't have any flavor (i am sure though if you use beets it would add flavor to it)...just more for color. I didn't blend it well enough so I had chunks of date but it was still super yummy!!
