October 1954 Good Housekeeping

I found the October 1954 Good Housekeeping in the attic. I'll save it for a few more years because it's so much fun to look at the pictures, stories, and advertisements.

Here is a recipe for what amounts to baked corn dogs. I've typed it exactly as provided, so you can time travel back to the moment. Pretend you're wearing a nice dress, pearls, and pumps, and your linoleum floor is gleaming from a recent application of Johnson's Glo-Coat.

Corn Doggies

1 cup sifted flour
2 tablesp. sugar
2 teasp. baking powder
1 teasp. salt
3/4 cup corn meal
1 egg
1 cup milk
1/3 cup salad oil
1/2 cup minced onions
6 franks
1 tablesp. prepared mustard
1 tablesp. salad oil

Start heating oven to 375 degrees F. Into bowl, sift flour, sugar, baking powder, salt. Stir in corn meal. Add egg combined with milk, 1/3 cup salad oil, and onions. Stir just enough to dampen flour. Pour into greased 12" x 8" x 2" baking dish.

Cut 4 slashes, 1/4" deep, in each frank. Place franks, with cut sides up, in row on top of batter. Bake 20 min. Brush with combined prepared mustard and 1 tablesp. salad oil. Bake 20 min. longer, or till done. Then cut into 6 servings, with frank in center of each serving. Especially nice served with Quick Barbecue Sauce, below (make twice recipe). Makes 6 servings.

Quick Barbecue Sauce

In cup, combine 1/2 cup catchup, 1 teasp. dry mustard, 3 dashes tabasco, 1 tablesp. Worcestershire sauce. Makes about 1/2 cup.

Fruit Slaw
Make coleslaw as usual, adding 2 or more of these: grated orange rind, seedless raisins, canned pineapple chunks, unpeeled apple cubes, orange sections, seedless green grapes, slivered almonds, or chopped walnuts.

Choco-Coconut Balls
Early in day: Grated unsweetened chocolate; toss with shredded coconut. Make balls of vanilla ice cream; place in freezer.
To serve: Roll ice-cream balls in coconut. Place on dessert plates. Top with chocolate sauce. Serve 1 ball to each person.

No need for two cars in the family: mom stayed home all day and planned a wonderful family meal as well as after school milk and cookies for the kids.

Nathan's hot dogs or the Ekridge smoked sausages I presume? I can't bear
to think of what goes in t he others, but Adrienne tells me the smoked sausages are the best and I like them best too.

I like those kosher ones with the skin that snaps when you bite into it, but I don't know how well they would stand up to this cornbread around them.

I think my mother tried these out on us! I just don't do "dogs" anymore, if I can help it.

The gluten-frees on Mr. Tbend's side found some gluten free bratwurst. I don't know if they are better for a person in general, or just as bad as the other sausage products in their own special way.

Next time I have hot dogs, this'll be the first thing I'll try. I just looked and corn dogs were first introduced as Pronto Pups at the 1941 Minnesota State Fair.

I was four years old in 1954, so my job would have been standing on the step stool to reach counter height and stirring the barbecue sauce while I snatched grapes, apple chunks and walnuts out of the salad.

I thought it was funny that they didn't double the sauce recipe in the first place instead of telling the cook to do so. Maybe it had something to do with stirring it up in an cup.

What a cute image. We had wooden step stools that we got a lot of use out of. I can't remember if my mother ever let us actually help cook, but she let us observe and learn, and then we cooked on our own when she wasn't around.

Seems like a nice alternative to deep fried. The commercial ones have always been a disappointment to me.
