Some News and Blueberry Zucchini Bread.

Just wanted to share this with you.

Hello,everybody as this is Thursday Afternoon.
What did I do today.
Not much.
Workout and Tai Chi along with getting Mike car register.
He blew a casket when I told him that what was the cost.
It was a mere four hundred dollars.
That is because that last time that he bought a car was seven years ago.
He is not aware of prices going up and up.
Then for my entertainment made Blue Berry Zucchini Bread.
This was mostly for my neighbors.
Next door to us and across the street.
We considered that this is our neighborhood.
The rest do not have any interest in us and that is fine.
One of them we do not care for.
Love thy neighbor not.
Blueberry Zucchini Bread.
Here is the recipes for this Bread.
2 eggs lightly beaten.
1/2 cup of vegetable oil as I use apple sauce.
2 teaspoon of vanilla extract
1/2 cup of sugar white
1/2 cup brown sugar and lightly packed
1 cup of shredded zucchini
3/4 cup all purpose flour
3/4 cup whole wheat flour(if you do not have this use all purpose)
1/2 Kosher salt or regular
1/2tsp baking powder
1/8 tsp of baking soda
1-1/2 tsp ground cinnamon
1 cup of fresh blueberries.

Preheat the oven at 350 degree
In a large bowl beat together the eggs,oil,vanilla and sugars.
Fold in the zucchini
Beat in the flour,salt,baking powder,baking soda,and cinnamon
Gently fold in the blueberries.
Transfer this to the pan.
Lightly grease 8.5x4.5 loaf pan.
I only use one pan and surely you can you use two
Baked 55-65 min.depending how accurate your oven is.
For me it was only 45 min.
Insert a knife in the middle if it comes out clean then it is done viola.
Cool it for 20 minutes or so and then cool it on a wire rack.
You also can make muffins from this.

Question?for all of you baker out there and been meaning to ask.
What do they mean with say lightly or packed tight.This is the brown sugar.
Does it make any different?

All I know is I use extra baking powder. My sister says after 6 months it "goes bad" (preventing rising). Thanks for the recipe. Oh yes, I LOVE the picture!!

Yes, it makes a difference. Pack it as tightly as you can. It seems to pick
up moisture so you need to pack it. Lots of times I use all brown sugar
because we like the flavor but you have to use a little more because it
isn't as sweet as brown sugar. It sounds so good.

Thank you for the insight.Mike just left to deliver the bread and I ate small piece and was very yummy.
