Bowties/chicken/fresh Tomato Sauce


 
Did you ever noticed that food is always better
when someone else cooks.
Last year when I had my open heart surgery
my good friend Miguel call to say that he is
coming over and cooking dinner for us.
He is a fair cook and quite an imagination.
He lives in MA.
When over after we visit and talk or getting
caught up on things.
It was a lovely afternoon and feeling much
better after my surgery.
This is the recipe that he cook for us.

    Bowties With Chicken and Fresh Tomato Sauce
1 tablespoon olive oil
1 1/2 lbs.boneless chicken breasts,
cut in 1 in.pieces
1 green bell pepper,cut in 1in.pieces
about 1-3/4 cups
2 teaspoon minced garlic
1 teaspoon Italian seasoning.
1 teaspoon salt.
1/4 tsp.freshly ground pepper.
1 lbs.fully ripened tomatoes,coarsley chopped.
about 2 cups.
1/4 cup sliced black olives.
3 1/2 cups bowtie pasta(about 8 ounces)

   In a large skillet,over medium heat,heat oil
Add chicken;cook stirring often till browned.
about 5 minutes;remove to a plate.
Add pepper and garlic.
Italian seasoning;salt and pepper;cook and stir
until peppers are almost tender about 5 min.
Add tomatoes and olives;cook and stir
until tomatoes soften and mixture is hot,about
5 min.
Stir in reserved chicken;heat only until hot.
Cook pasta;drain and transfer to a serving
bowl.Stir-chicken-tomato mixture into pasta.
Serve with Parmesan cheese.
Top it off with your favorite wine and bead.

Not only sounds delicious but it's very healthy as well.And you are right. It always tastes better when someone cooks it. The company probably did you a world of good as well.
