I think I may have been a little too active yesterday because I was oblivious to the rest of the world until nine this morning. R got up for work and got ready but I don't recall hearing him at all. And then I do remember hitting the snooze a few times and after that my daughter woke me at nine! She had been sleeping since after nine-thirty last night and it was unlike her to sleep so long. Daughter said she had a sore throat and I could tell her nose was stuffy so she stayed home from school today.
I must have been really tired because I slept another two hours this morning and got up before noon. My daughter wasn't feeling so well either as I could see was pretty much low key all day.
I did feel better this afternoon and managed to get organized a bit and write a list. I have been out of the loop for nearly a week but know that I got to steer the boat some for the other two.
It was sunny this morning but finally rained lightly this afternoon. I guess R will have to wait until tomorrow to finish mowing the lawn.
Dinner will be breaded fish fillets (thank you Gorton's), macaroni and cheese, and broccoli. Seems to me the stinky vegetable should go with the fish...lol. I have used the same recipe for Super-Easy Macaroni and Cheese so many times I should have it memorized. I will share it below. It comes from Family Circle Magazine and was submitted by Kellie Kami of Cook, Minnesota. I love it most because it is one dish and all cooked in the oven!
1 can (14 1/2 ounces) chicken broth
1 cup plus 2 tablespoons uncooked elbow macaroni
3/4 cup evaporated milk
2 tablespoons butter, cup up
2 teaspoons all-purpose flour
1/4 teaspoon salt
1/4 teaspoon black pepper
1 1/2 cups shredded cheddar cheese
1.Heat oven to 350 degrees.
2.>In a medium-size baking dish (about 8 x 10 inches), combine broth, macaroni, evaporated milk, butter, flour, salt and pepper. Stir to combine. Cover with foil and bake at 350 degrees for 40 minutes. Stir after 15 minutes, and again after 30 minutes. Remove from oven; stir in cheese and serve immediately.
