I am sharing this with you for the horror factor. If it sounds good to you, and you try it, let me know what you think.
1 3 oz package lime gelatin
1 cup boiling water
1 cup applesauce
2 tablespoons lemon juice
1 cup shredded zucchini
1/2 cup shredded carrot
1/2 cup chopped celery
2 tablespoons chopped green pepper
2 tablespoons chopped onion
1 cup dry cottage cheese
1/2 cup sour cream or yogurt
1 teaspoon grated lemon peel
1/4 - 1/2 teaspoon salt
Dissolve gelatin in boiling water. Add applesauce and lemon juice. Chill until partially set. Fold in the vegetables. Turn into a lightly-oiled 9 inch pie plate. Chill until firm. Combine cottage cheese, sour cream, lemon peel and salt. Spread over the firm gelatin mixture. May garnish with parsley and halved cherry tomatoes.
