Soft Chocolate Oatmeal Cookies Recipe

These stay soft and chewy. The oatmeal makes them kind of wholesome, and we're all supposed to eat a few nuts every day.

Double Chocolate Oatmeal Cookies
1 1/2 cups sugar
1 cup butter, softened
1 egg
1 teaspoon vanilla extract
About 1/4 cup water
1 1/4 cups flour
1/3 cup cocoa powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3 cups uncooked quick oatmeal
1/2 cup semisweet chocolate chips
(1/4 - 1/2 cup chopped walnuts)

Preheat oven to 350 degrees and lightly grease a cookie sheet. Combine sugar and butter in a large bowl, beating with a mixer at medium speed until fluffy. Beat in the egg and vanilla. Sift the dry ingredients together and stir in, adding up to 1/4 cup water to make a dough. Chill if desired. Form tablespoon-sized balls and place on the greased cookie sheet. Flatten slightly and bake 10 to 12 minutes. Don't overbake.
