Pizza Quiche Recipe

This recipe came from "The Coupon Saver's Cookbook" by Beryl Marton, copyright 1980. I've seen several articles lately about how couponing is coming back into vogue in these tough times. I can remember back in the '80s buying cheap little frozen pizzas on sale with coupons and then stretching them to go further with this recipe.
Pizza Quiche

1 frozen commercial pizza, 9-in or so
1 onion, chopped fine
2 tablespoons olive oil
(1/4 pound sliced mushrooms)
(Cooked bacon, crumbled)
3 eggs
1/2 teaspoon salt
Freshly ground black pepper
1 1/2 to 2 cups milk (reconstituted dry milk)
1/8 to 1/4 cup grated Cheddar or Parmesan cheese

Defrost the pizza and press it into a 9 or 10 inch pie pan. Saute the onion in the oil until limp and add the mushrooms (if you want) and saute about 5 minutes. Cover the pizza with these vegetables and cooked bacon crumbles (if used). Beat the eggs with salt and pepper and 1/2 cup milk. Pour over the onions and mushrooms. Add more milk as needed to fill the pie pan. Sprinkle with cheese. Bake in a preheated 375 degree oven for 25 minutes, or until a knife inserted in the center comes out clean. (Put it on a cookie sheet if you worry about drips. Makes 4 to 6 servings.


In the summer our treat when I don't feel like cooking is to bake a frozen pizza. We like the cheap, thin cheese ones, none of this self-rising crust for us. But when I feel like doing a little more, I make this quiche.
