Orange Chicken
8 pieces of chicken
1 cup flour (approximate)
1 small can frozen orange juice (concentrate?), thawed
1 bunch green onions, chopped
Dredge the chicken pieces in flour. Some people might add some salt and pepper, or even some poultry seasoning to the flour, but not everyone. Myself, I would try poultry seasoning, garlic powder, salt, and pepper. Brown the chicken in some oil. Of course oil is not listed in the ingredients because that would make it five ingredients, and maybe it just goes without saying that oil is needed to brown chicken. Believe me, if they only had three ingredients they would list the oil to bring it up to four.
Place in a casserole. Cover with the chopped green onions and drizzle with the orange juice. The only frozen orange juice I've seen is concentrate, and although the recipe doesn't specify it, I'm guessing that's what they mean.
Cover and bake 1 hour at 350 degrees. Uncover and continue to bake for 15 minutes. Serves 4 to 6.
I don't know why you couldn't cook some rice along with the chicken in the same baking dish. Just spread raw rice under the chicken, maybe 1/3 to 1/2 cup of rice, and add about 1/2 to 3/4 cup water later in the baking if it seems to need it. Yes, fat from the chicken would get into the rice, so if you are worried about that, cook the rice in a separate covered dish in the oven along with the chicken.
I suppose you could make this with boneless chicken breasts, but bone-in chicken has more flavor. It's cheaper to buy a whole chicken on sale and cut it up, using the extra bits to make broth that you freeze.
