In Glen Haven, Colorado is a little general store that is locally famous for cinnamon rolls. They are cake-like and large, but really aren't all that good. I think one reason people go out of their way to buy them is because they are large, and to certain people, large equals 'good.'

This recipe might come close to those. I don't have a cake mix, but you go ahead and try it and let me know how they come out.

Cinnamon Sweet Rolls

Makes 2 dozen
1 yellow cake mix
2 packages dry yeast
5 cups flour
2 1/2 cups hot water
4 tbsp butter
Brown sugar
Cinnamon
Nuts (optional)
Topping:
1/2 cup butter or margarine, melted
4 tbsp brown sugar
3 tbsp light corn syrup

Mix the cake mix, yeast, and flour well. Add hot water and mix well. Let rise until double. Cut in half and roll out into a rectangle. Sprinkle with the cinnamon, sugar, and nuts. Roll like a jelly roll and cut into pieces. Place on a greased cookie sheet with sides. Cover and let rise until double. Mix the topping ingredients and spread over the rolls just prior to baking. Bake 25 minutes at 375 degrees.

This next bread is a quick bread. I might try to convert it to a yeast bread. We'll see.

Cottage Cheese Fruit Bread

1 cup cottage cheese
2 eggs, beaten
1 cup sugar
3/4 cup milk
1 tsp vanilla
2 3/4 cups flour
2 1/2 tsp baking powder
1/2 cup raisins
1/2 cup walnuts
10 chopped cherries

Mix first 7 ingredients in order given; add raisins and walnuts. Pour into a greased loaf pan. Decorate the top with chopped cherries and sprinkle with sugar. Bake about 1 hour at 350 degrees.
