Makes 2-4 Servings
Waldorf Salad is a classic salad made famous by the kitchen of the swank Waldorf-Astoria Hotel in New York. A fresh new twist keeps this classic alive.
Dressing:
3 tablespoons raw seasame tahini
1 clove garlic
1/4 cup lemon juice
2 tablespoons apple cider vinegar
1 tablespoon organic extra-virgin olive oil
1 1/2 tablespoons raw honey or maple syrup, or 2 soft dates, pitted
2 teaspoons dill
1-2 teaspoons sun-dried sea salt, or to taste
Fresh water as needed
Salad
1-2 apples, sliced
2-3 stalks celery, chopped
2 carrots, shredded
3 green onions, finely chopped to the top
1/2 cup raisins
1/2 cup chopped walnuts
1/4 cup chopped parsley
1 head crisp lettuce, torn
To make the dressing: In a blender, blend tahini, garlic, lemon juice, vinegar, olive oil, honey or maple syrup or dates, dill, & sea salt, adding water 2 tablespoons at a time as necessary to blend until smooth.
To make the salad: Cut apple into quarters & cut out core & seeds. Cut into slices. Chop celery in 1/4-inch pieces along the stalk. Toss together apple, celery, carrots, onions, raisins, walnuts & parsley. Drizzle in dressing & toss. Serve on a bed of torn lettuce.
