Traditional Chai Spice Tea

Makes 8 cups.

In this caffeine-free drink, traditional chai spices are brewed for a spiritual experience. Sweeten & lighten to taste.

8 cups water
3 3-inch cinnamon sticks, broken into pieces
1 whole nutmeg, cut into small pieces
5 whole cloves
6 cardamom pods, bruised with the flat side of a knife
1 2-inch piece fresh ginger root, grated
2 whole star anise
1/2 teaspoon sea salt
Raw honey, maple syrup, &/or liquid stevia to sweeten to taste
Almond milk to taste (soy or rice milk can be substituted)

Bring all spices to gentle simmer in water & reduce to a low heat. Allow to simmer covered for 20-40 minutes until very aromatic. Pour liquid through a strainer. Save spices to use again. They can be used several more times, reducing the amount of water by 1 cup each time to maintain the potency of the tea. Sweeten to taste with raw honey, maple syrup, &/or liquid stevia. Add almond milk for desired taste. Store unused portion in a glass jar in the refrigerator.
