Makes 2-4 servings.
Salad Nicoise is a traditional French salad with fresh string beans & potatoes in a tangy marinade. Here, Jerusalem artichokes or steamed potatoes can be used.
5 green onions, minced
2 cloves garlic, finely minced
6 tablespoons virgin olive oil
2 tablespoon balsamic vinegar
1 tablespoon apple cider vinegar
1 lemon, juiced
1 tablespoon prepared Dijon mustard
1 tablespoon maple syrup or raw honey
1-2 teaspoons sun-dried sea salt
2 cups peeled & cubed Jerusalem artichokes, or 2 cups cubed red-skinned potatoes, steamed
1/2 pound fresh green string beans
1 generous head butter lettuce or green leaf lettuce, torn (We used Manoa lettuce)
Fresh cracked black pepper to taste
In a salad bowl, mix onions and garlic with olive oil, vinegars, lemon juice, mustard, maple syrup or honey, & sea salt. Toss artichokes or potatoes with marinade. Snap off the ends of the string beans & steam just until beans turn bright green. Remove & run under cold water until the beans are cool to the touch. Toss the string beans with the artichokes or potatoes & marinade. Tear the lettuce leaves & gently toss with the marinade, artichokes or potatoes, & string beans with salad servers. Season with cracked pepper to taste.
