Makes 1-2 servings
Mango lasse is a sweet Indian delight traditionally made with yogurt. The almonds make this a creamy treat for breakfast or dessert.
1/4 cup almonds (or cashews)
1 cup fresh coconut water, or fresh water as necessary to blend
1 ripe mango, pitted
1 teaspoon vanilla
1/2 coconut meat
1 teaspoon cinnamon
1 teaspoon freshly ground cardamom
1 cup orange juice, frozen in an ice cube tray
Blend almonds & coconut water or fresh water at high speed until smooth. Add mango, vanilla, cinnamon, coconut and cardamom and blend until smooth. Add frozen orange juice & blend until slushy.
Serve immediately.
