Our dinner for tonight was a beautiful medley. We gave this 5 stars. This makes 2-4 servings
Ingredients
4 green onions, finely cut
1-2 cups red grapes, cut in halves
2 teaspoons roughly crushed whole coriander seeds or 1 teaspoon ground coriander
3-4 tablespoons good walnut or olive oil (or less for a lighter dressing)
2 tablespoons umeboshi plum vinegar or sugar cane vinegar
2 tablespoon balsamic vinegar or apple cider vinegar
1 tablespoon raw honey, maple syrup, or organic evaporated cane juice
Sun-dried sea salt to taste
2 medium heads or 3 small heads endive or ong choy
6 delicate cilantro sprigs
1/3 - 1 cup chopped walnuts
Fresh cracked black pepper to taste
Ina large bowl, toss onions, grapes, and crushed coriander with oil, vinegars, sweetner, and sea salt. Separate endive leaves from the head. Gently toss with cilantro sprigs, grape mixture, and green onions.
Serve on salad plates & sprinkle with walnuts. Season with Black pepper to taste....ONOLICIOUS! You like try?
