Crisp Caesar Salad with Tamarind Caesar Dressing &

Makes 4-6 servings.

Tamarind is a tangy, sweet complement to a Caesar salad and can be found in Indian & ethnic markets. Crumble in leftover flat bread as croutons.

Pine Nut Parmesan
1/4 cup pine nuts
1/4 cup whole cashews or macadamia nuts (we used Mac nuts)
Drizzle of organic extra-virgin olive oil or fresh water (we used oil)
2-3 tablespoons nutritional yeast
Pinch dried garlic granules or powder
pinch sun-dried sea salt

Salad
1 large head or 2 medium heads romaine lettuce, torn
Cucumbers
Bell pepper

To make the pine nut parmesan: in a food processor or blender, chop pine nuts & mac nuts into a fine meal. Drizzle in a touch of oil. Pulse until moist & ground. Add nutritional yeast, dried garlic, & sea salt, and pulse until crumbly

To make the salad: separate romaine lettuce leaves and break into pieces. Dollop the Caesar Dressing on a few tablespoons at a time and toss with lettuce until well coated but not drenched. Serve & sprinkle with the Pine Nut Parmesan.

Tamarind Casesar Dressing
Makes 1 1/2 Pints.
An authentic Caesar dressing with tamarind for a perfect sweet-sour tang. Toss with romaine lettuce and crumbled flat break or crackers for an absolutely great salad.

1/4 cup raw tahini
1/4 cup pine nuts
2-4 cloves garlic
2 green onions, or 1/4 medium onion
1 lemon, juiced
3 tablespoons apple cider vinegar
1 1/2 tablespoons maple syrup or raw honey, or 2 soft dates, pitted
3 tablepsoons nutritional yeast
1 teaspoon black pepper, or to taste
1 teaspoon sun-dried sea salt, or to taste
2 tablepsoons tamarind paste (if tamarind is not available, use 2 dates, 1 teaspoon lemon zest, & 3 tablespoons lemon juice)
2 cups fresh water, or as necessary

In a blender, blend all ingredients until smooth. the dressing should be quite thick, Add more water to thin as desired.
Store in a glass jar with a lid in the refrigerator.

OH PUHLEEZE call it somethign else---THAT IS NOT A CAESAR SALAD!!! No egg, no anchovie--USE A BLENDER?????
I made Caesar salads tableside at both the 4 Seasons and the gas Pavillion at the Worlds Fair---you mash the garic, oil and anchovie together at the bottom of a WOOD bowl---add the romaine--toss with a raw egg--add croutons--that's a caesar salad!!!!
