Ingredients
10 Bamboo Skewers
2 Chicken breasts
2 tsp Vegetable oil
2 tbsn Galangal finely chopped
2 tbsn lemon grass finely chopped
2 tbsn garlic finely chopped
2 tsp chilli finely chopped
2 green onion finely chopped
1/2 tsp Star Anise, Cinnamon, & cloves (all ground) (3-spice)
2 tsp brown sugar
1 tsp salt
40 kaffir lime leaves
lime wedges to serve
Directions
Soak skewers in cold water for at least 15 minutes.
Marinate chicken in oil, galangal, lemon grass, garlic, chilli, green onion, 3-spice, brown sugar, salt, and 5 lime leaves, finely chopped.
Let stand for 15 minutes or for several hours.
Preheat oven to 425.
Skewer chicken cubes between whole lime leaves, placing four pieces on each skewer.
Cook chicken skewers on on cookie sheet.
Serve with lime wedges.
