Makes 2-4 Servings
The essence of summer lies in the sweet succulence of melon & spicy fresh arugula.
1 tablespoon minced ginger
3 green onions, chopped to the top
2-4 tablespoons organic extra-virgin olive oil (use less for a lighter dressing)
1 tablespoon umeboshi plum vinegar or apple cider vinegar
1 lemon, juiced
1 tablespoon raw honey or maple syrup, or 2 tablespoons orange juice
1-2 teaspoons sea salt, or to taste
1/2 pound arugula, young leaves
1/2 summer melon (best available-cantaloupe, canary, honeydew, galia, etc.), peeled, deseeded, & cubed
1/2 cup roughly chopped fresh cilantro
Pinch sea salt
Fresh black pepper to taste
In a salad bowl, mix ginger and onions with olive oil, vinegar, lemon juice, honey or maple, and sea salt. Allow to stand 5 minutes or more to develop flavor. Toss arugula leaves in the salad bowl with marinade. Serve arugula on salad plates and top with cubed melon. Sprinkle cilantro on top of the melon. Season with a pinch of sea salt & black pepper to taste
