Vegetable Casseroles

In my cookbook collection, I've got one of those small books sold at tourist traps entitled "Frontier Chuckwagon Cookin' " It has a price tag on it from Little America, which is Wyoming. The back of it is set up for mailing: fill in the addresses and attach a 12 cent stamp for third class. That's how old it is.

This has a nice flavor. If you were cutting carbs, you could serve it as a sauce over those skinny green beans instead of noodles, or serve as a side dish to something.

Escalloped Onion with Cottage Cheese

Makes 4 - 6 servings.
8 medium onions, sliced thin
3 tbsp butter
4 1/2 tbsp flour
1 1/2 cups cottage cheese
1 1/2 cups milk
1 1/2 tsp salt
6 dashed black pepper
1/4 tsp paprika
1 sweet green pepper, diced
1 1/2 cups soft bread crumbs
1 1/2 tbsp butter

Cook the onions in boiling water until soft. Melt the 3 tbsp butter, stir in flour, blend well, and add the milk slowly, stirring until thick. Add seasonings and cottage cheese and mix well. Add green pepper. Drain the onions, arrange in a buttered baking dish in alternate layers with the cheese mixture and cover with bread crumbs. Dot with the 1 1/2 tbsp butter. Bake 20 minutes at 350 until crumbs are brown, and it is heated through.

Nebraska Baked Corn
1/2 green pepper, chopped
1/2 medium onion, chopped
2 tbsp butter
2 tbsp flour
1 tsp salt
1/4 tsp paprika
1/4 tsp dry mustard
1 cup milk
1/2 cup dry bread crumbs
1 tbsp butter
1 beaten egg
2 cups whole kernel corn
1/2 cup cracker crumbs

Brown pepper and onion in 2 tbsp butter for 5 minutes. Add flour and seasoning, and stir until blended. Add milk and stir until thick. Add bread crumbs that have been browned in the 1 tbsp butter, then add corn and egg. Bake in a greased dish with cracker crumbs on top, 400 degrees at 30 minutes.

Broccoli Casserole

1 package frozen chopped broccoli (or fresh)
4 eggs, well beaten
1 can cream of celery soup, undiluted
1/3 cup milk
1/3 cup grated cheese
1 tsp grated onion (or chopped very fine)
1 tsp Worcestershire sauce
1 tsp salt
1/8 tsp nutmeg
1/4 tsp pepper

Cook the broccoli, mix well with remaining ingredients and turn into a buttered baking dish. Cook at 350 degrees for 50 minutes until well cooked.

Spoon Bread

3 cups milk
1 cup corn meal
1 tsp salt
1 tbsp sugar
1/2 cup butter
3 eggs

Let milk come to a boil, add sugar, salt, butter, and corn meal, making a thick mush. Beat eggs separately, adding the yolks to the mush. When thoroughly mixed, fold in the beaten whites. Bake in a greased baking dish at 375 degrees, until set but not dry, and serve very hot.

Good point! Every time I see something about cooking something in foil packets I think of you and your DH.

I love the Nebraska corn and am all set to try the broccoli casserole for the
kids Friday night supper.

I can't believe summer is over and I haven't had any fresh corn on the cob. I'll get some tomorrow.

I'm in the same boat as you are. Good thing I'm 20 miles from town or I'd be going to the store after reading through the recipes.
