Spicy Orange Chicken or Beef

2 tablespoons vegetable oil
1 pound boneless, skinned chicken breasts, cubed, or 1 pound beef round steak, thinly sliced
1/4 cup slivered orange rind
1 clove garlic
1/2 teaspoon ground ginger
2 tablespoons cornstarch
1 cup chicken or beef broth
1/4 cup soy sauce
1/4 cup dry sherry or water
1/4 cup orange marmalade
1/4 to 1/2 teaspoon crushed, dried red pepper flakes
(Cooked rice)

Heat oil in a wok or large skillet over medium high heat. Add meat, one-third at a time. Stir-fry each batch 3 minutes or until golden brown. Return all meat to wok. Add orange rind, garlic and ginger. Stir-fry 1 minute. Combine cornstarch, broth, soy sauce, sherry, marmalade, and red pepper flakes. Add to meat in wok. Bring to a boil over medium high heat, stirring constantly, about 1 minute, or until thickened. Serve over rice, if desired.

Beef and Potato Tortilla Filling

1 large potato, or 2 small, cut into 3/8 inch cubes
1/2 pound lean ground beef
1 medium onion, chopped
2 cloves garlic, minced
1 tablespoon chili powder
1 teaspoon ground cumin
1 teaspoon beef soup base (or 1/2 bouillon cube) dissolved in 2 to 3 tablespoons water
Salt and pepper to taste
Diced tomatoes
Sliced lettuce

Put potatoes into a 4 cup microwave safe bowl. Cover tightly. Microwave on high 6 minutes. Cook ground beef, onion, potatoes and garlic in a large skillet until meat begins to brown. Add remaining ingredients and combine thoroughly, cook a few minutes more. Use to top tortillas or to fill tacos.

Wendy's Chili (Low Fat)

2 pounds lean ground beef (or ground turkey)
1 29-ounce can low sodium tomato sauce
1 29-ounce can kidney beans with liquid
1 29-ounce can pinto beans with liquid
1 medium onion, diced
2 green chiles, diced
1 rib celery, diced
3 medium-sized tomatoes, chopped
2 teaspoons cumin powder
3 tablespoons chili powder
1 1/2 teaspoons black pepper
2 teaspoons salt
2 cups water

Brown the lean ground beef (or ground turkey) and drain the fat off. Crumble the cooked beef (or turkey) into pea size pieces.

In a large pot, combine the beef (or turkey) with the remaining ingredients and bring to a simmer over low heat or in a slow cooker. Cook, stirring every 15 minutes, for 2 to 3 hours.

I have access to low sodium soy sauce so it is orange chicken for me. You seem to know just what I am craving.

Mmmmm That first one sounds lovely. I'll have to leave out the soy sauce. Too much sodium. Can I substitute with another 1/4 cup of sherry?

Sure, it's worth a try. I wonder if some strong left-over black coffee could stand in for the soy sauce.
