Super Subs

I should have taken pictures, but I forgot. The turkey subs I made for our Big Game Party came out better than I could have hoped. It's nothing earth-shaking, more of a method or suggestion. I wanted to get it written down as a reminder for next time.

Hot and Toasty Turkey Subs

Olive oil
Italian seasoning herbs
Red wine vinegar
Yellow mustard

Submarine rolls, split
Mayonnaise
Deli sliced turkey
Swiss cheese slices
Thin sliced tomatoes
Finely shredded lettuce

Make a vinaigrette with the first four ingredients and paint onto the sub rolls. Spread on a little mayonnaise if desired. Cover both halves with turkey slices. Preheat the oven to 400 degrees and bake the bread with turkey for a couple minutes until the edges of the meat just start to brown. Cut the Swiss cheese slices in half diagonally and arrange them over the meat. Put back in the oven and bake until the cheese melts. You could turn the broiler on briefly for the last couple minutes, but watch closely.

Remove from the oven and arrange the tomatoes and lettuce over the cheese. Close the subs, and use a serrated knife to cut into serving size pieces. The bread will be crisp on the outside, soft on the inside, and the whole thing just yummy.

My cousin Betsy, who isn't a big eater ate a whole 8 inch sub.

Definitely not a good idea for the hungry. Did I mention we bought a 50-count box of snack size assorted chips? Cheetos, Freetos, Doreetos etc.

I'd noticed that sub shops drizzle some kind of dressing over the insides out of a squirt bottle, so decided that's the secret.

when you say oven,not the broiler?just wondering.It does sounds yummy.

It's like those Stauffers French Bread pizzas - bake it at 400 degrees so the outside of the bread gets crisp, and the inside of it stays soft. Now, the broiler is optional, but if you decide the cheese is just sitting there looking at you, you can fire it up. A toaster oven would be more economical than the whole oven.
