Orange Raisin Sauce for Ham

Last night I realized I didn't have any gravy planned. There isn't a lot of dripping off a honey ham, so I came up with this. I am out of brown sugar, and don't have dry mustard, so had to make some substitutions.

Raisin Sauce for Ham
2 tablespoons brown sugar (or maple syrup)
1/2 teaspoon grated orange rind
1 teaspoon dry mustard (or dijon mustard)
1 1/2 tablespoons cornstarch
1 cup orange juice
1/3 cup seedless raisins
1 tablespoon ham drippings or butter
1/2 cup ginger ale (or 2 - 3 teaspoons fresh ginger puree)

In a small saucepan, combine brown sugar, orange rind, mustard and cornstarch. Stir in orange juice. Bring to a boil, lower heat and continue to simmer until mixture thickens (5-10 minutes). Add raisins and butter or drippings from ham; cook another 3-4 minutes. Stir in ginger ale.
Spoon over rolled slices of baked or pan-fried ham.

Makes about 1 1/2 cups sauce.

It might need 'something' to give it tang (aka 'brighten the flavor'), so I might try lemon juice or wine vinegar. If it was just us, I might try some liquor. First, I'll taste it with some of the food that it's meant to complement because maybe it's just fine.

In Colorado a lot of people have roast beef for Christmas dinner - really nice, special-ordered rib roasts with the ribs on. The only family tradition I remember was oyster stew on Christmas Eve.

It's a tough decision: ham or turkey? I love them both!

One of those sliced hams is so much easier! But turkey is so good! I saw a lot of people buying both, so I guess they couldn't decide, either.

Thanks so much Marta. Thinking about that something to brighten it, I kept going back to what you've said in the past about adding some booze to the gravy and/or the cranberry sauce.
