Green Tomato Pie

How's your garden growing? We have a lot of green tomatoes that may or may not ripen before frost due to our cooler nights at this altitude. I've heard that green tomato pie is supposed to taste like apple pie. I've never tried it, but maybe one of these days I will.

Green Tomato Pie

4 cups green tomatoes
2 cups brown sugar
1 teaspoon cinnamon
1/2 teaspoon cloves
1 - 2 tablespoons flour
1 double crust unbaked pie shell (10 inch)

Wash the tomatoes but do not pare them. Slice in thin rings and put in a colander to drain for 1/2 hour. Pour away the juice. Combine the tomatoes with sugar and spices. Sprinkle the bottom of the pie crust with flour. Pour in the tomato mixture. Sprinkle with more flour. Cover with the top crust and seal the edges. Brush the top with milk or a beaten up egg and sprinkle with sugar or cinnamon sugar. Bake at 425 degrees for 15 minutes, then at 375 degrees for 30 minutes.

Yes, I'm wondering if it's worth using a pie crust just to try it, but I've got some little pie pans, so maybe I'll make just a little pie.

Oooh I bet that tastes nice. I could have baked lads of these pies last year because they didn't ripen, but this year they all did. Ill keep this recipe though, could come in handy.

Some of my larger green tomatoes were dinged up by yesterday's hail storm, and I'm thinking I should make them into a pie before they go bad.
