Bacon Ends and Pieces

The other day at a Kroger store (King Soopers) I discovered Wright brand Bacon Ends and Pieces.



It is what it sounds like, the trimmings from those even slabs of sliced bacon that we are accustomed to buying. Yes, there is a lot of fat, but there are also big chunks of lean meat that I haven't seen in regular sliced bacon for many years. And the price is considerably less than sliced bacon.

It comes in a big clump so I chopped it into pieces, spread them out on a cookie sheet lined with plastic wrap, and froze it. Once they were solid, I put them in freezer bag and they're ready to grab for seasoning vegetables or rendering out for hot bacon dressing.

Shallots instead of onions is a big thing with them, too. I planted some shallots, but have trouble getting onions and radishes and such to 'bulb' up here, so might not get much more than the starts that I planted.

I was buying those ham hocks for seasoning bean soup all the time, and then either they got nastier or my tastes changed, so I'm thrilled to discover this bacon bargain. I was chopping up my sliced bacon into seasoning chunks as it was, so this makes more sense.

Looking for that picture of the package, I found a 'review' of that product by a guy who said he is a scientist on the Atkins diet, and he cooks up a package of those ends and pieces for a snack. He figured out the fat to water ratio cooked and uncooked, and all I could think was 'eat up, Porky.'
