I made and canned five quarts of chili sauce tonight. Ingredients: Tomato sauce - chopped, pureed and food-milled Roma tomatoes, chopped yellow onions, chopped Sandia chilies, chopped Serrano chilies, diced Jalapeno chili, garlic, cilantro, black pepper (coarse), cactus (slivered), chili powder, cumin, Worcester sauce, paprika and olive oil.

All five jars sealed. It is thick as I cooked it down about a pint and a half from the beginning level. The house smells like Terlingua, Texas during the annual chili cook-off.

I haven't made the labels but I will. I tasted it, so I think I will name it "Bite Me Chili." To a novice chili-eater it would feel like the roof of your mouth was turning into broken glass. It is really, really good!

It is cooling off outside. We expect overnight storms now approaching the Indiana-Ohio border.

FYI: I am not giving a house key to anyone.
