I'm thinking of that Over the River and Through the Woods To Grandmother's House We Go song that we sang in grade school. And you know that Grandma's windows are all steamed up with good cooking.
Here is my mother's turkey stuffing/dressing recipe, the way she used to make it.
White sliced bread (like Wonder)
Thinly sliced onion
Thinly sliced celery
Butter
Broth from cooking the giblets, neck, and wing tips (or chicken broth)
Sage
Thyme
Salt and pepper
Fresh oysters, cut into pieces if large - optional
Spread the bread out on your oven racks. Heat the oven up to 250 degrees and turn it off. When the bread is totally dried out, use your big rolling pin to crush it to fine crumbs and put them in a bowl. Saute the onion and celery in the butter until soft and transparent. Stir them into the bread crumbs along with the broth and seasonings and other ingredients such as the oysters. Use enough liquid to make it pretty gloppy because it'll dry out some in the oven. You can stuff it in the turkey and/or cook in a separate dish. She would put oysters in half of it and leave the rest plain.
I've noticed that back east a lot of people stir an egg or two into theirs, but ours was looser. There is a lot more you could put in there, like chopped apples or cranberries or nuts or cooked sausage or wine. Go ahead, I know you want to tell me about your favorite stuffing.
