Raisin Cookie Recipe

This is a different method than I’ve seen for rolled cookies but they come out really nice with a soft cake-like texture that you usually only see in the ones with sour cream in the dough and I like the rolled cookies better than drop cookies. The recipe was published in The Copper Town Cookbook, Jerome Arizona 1972.

Cousin Jack Cookies

3 cups flour
1/4 teaspoon salt
1/4 teaspoon nutmeg
2 1/2 teaspoons baking powder
1 cup shortening
1 cup brown sugar
1 cup raisins
2/3 cup milk
1 teaspoon vanilla
1 egg

Sift together the flour, salt, nutmeg, and baking powder. Cut in the shortening as for pie crust. Add sugar and raisins. Combine milk, vanilla, and egg in a small bowl. Stir into the dry ingredients. Pat or roll about 1/4 inch thick on a floured board. (Dough will be gloppy.) Cut with a round cookie cutter and bake about 10 minutes in a 400 degree oven or until golden brown.
