Soaking the raisins seems to make a difference. I got this from the Internet, but modified it some. It's not low calorie, but probably better for us than store-bought because at least we know what's in it. While they were baking the wonderful vanilla smell made me think I was in a bakery.
4 eggs
1 cup raisins
1 teaspoon vanilla
1 tablespoon water
1 cup butter, room temperature
1 cup brown sugar
1 cup white sugar
2 1/2 cups flour
1 teaspoon cinnamon
1 teaspoon baking soda
1 teaspoon baking powder
2 cups quick-cooking oats
1/2 - 3/4 cup chopped walnuts
In a small bowl, beat the eggs. Stir in the raisins, vanilla, and water. Let soak for 1 - 2 hours. Cream the butter with the sugars. Stir in the egg mixture, then the dry ingredients and nuts. Drop onto greased cookie sheets and bake at 350 degrees for 10 - 12 minutes or until done, but not too done or they will get hard.
We have the luxury of cool nights up here so I don't mind heating up the oven to try new recipes. These cookies stayed chewy after they cooled. Mr. Troutbend likes his cookies baked dark, and gets pretty passionate about the evils of half-baked cookies.
