The technique is a little different, and I think it shows in the texture.
1 teaspoon soda
1 teaspoon salt
1 teaspoon ground nutmeg
1 cup shortening
2 cups sugar
2 large eggs
1 cup seedless raisins
3/4 cup chopped nuts
1 teaspoon grated lemon rind**
1 tablespoon lemon juice**
1 1/4 cups sifted flour
3 cups quick-cooking oatmeal (not instant)
** or 1/2 teaspoon lemon extract and 1/2 teaspoon vanilla
Combine the soda, salt, nutmeg, and shortening. Gradually blend in 1 cup of the sugar. Beat in 1 egg. Add remaining sugar. Beat in the remaining egg. Stir in the raisins, nuts, lemon rind, and lemon juice. Mix the flour with the oatmeal, and gradually add to the first mixture. Chill the dough 1 hour or until it is stiff enough to handle. Shape into 1 inch balls, and place 2 inches apart on ungreased baking sheets. Bake 12 to 15 minutes at 350 degrees. Cool on racks, and store air tight.
