What Can I Talk About

Well, here's what I'm thinking, I can talk about my summer plants for sure. We've had so much rain that it's trying to drown my oregano, however, the basil is having a heck of a good time and growing like crazy. I also have some rather healthy mint. My Italian Parsley is having some rain issues as well, but both the heirloom tomato plant and the cherry tomato plant are flourishing in the summer heat and rain. The heirloom is filled with blooms right now and I completely love heirloom tomatoes. Can't wait to see them grow!

Cat and dogs are good, just being who they are -- furbrats. They are so spoiled that it is ridiculous. Boaz tells everyone what to do. Lilah, (the old lady) is more laid back and quiet, but still chugging along. Judah is full of vinegar and that other stuff which I will not say here. He's always got some kind of attitude going on. Sheba still rules the house and everyone around.

Now, let's see what else...I tried a really good recipe that a friend gave me and thought I'd pass it on. It's great for chicken breast or steak.

2 chicken breasts (or however many you need)
parmesan or romano cheese (grated of course, and very fine)
olive oil
basil
salt and pepper
garlic powder or crushed garlic
butter or your butter alternative
sun dried tomatoes
gorgonzola or blue cheese (optional)

Okay this is easy. Marinate your chicken in the olive oil and spices add whatever you like to the marinade. Let marinade at least an hour. Turn your broiler on Hi. Place your rack on the next to the lowest level of the oven. Arrange chicken on a baking pan and broil on on side for about 3-4 minutes, then sprinkle with the romano or parmesan and continue to grill. This will make a nice crust over the chicken. I also use skinless breasts. Cook no longer than 5 minutes and flip over and repeat on the other side. Do not over cook. Remember when you take the chicken out, it will continue to cook as you let it rest. Meanwhile put about 2 tablespoons of butter or butter alternative with 1/4 cup of olive oil, garlic, basil, and chopped up sun dried tomatoes (I use about 4 pieces of the tomatoes, diced) put in a microwaveable bowl or cup and cook on hi for 2 or 3 minutes, just till the garlic gets cooked a little.

Take chicken and place on plate, crumble gorgonzola or blue (I think feta would work as well) over the chicken, pour sauce on top of it and serve. It is yummy. The chicken is completely done, but still juicy and it's so easy to make. You can do this with steak, but it must be cooked longer depending on the thickness of the steak.
