Okay, I just pigged out, but on good food!
I made homemade bruschetta and a Thai chicken wrap as well. Its delicious and soooo easy.
The trick to make a great bruschetta is to use fresh ingredients. Fresh oregano and fresh basil and the flavors will be incredible. Here's what I did:
5 Italian (plum) tomatoes
7-8 leaves of lettuce leaf basil, washed and patted dry with a papertowel
1/4 cup of fresh oregano leaves
1 tblspn extra virgin olive oil
3 finely chopped scallions
salt and pepper to taste
Chop up tomatoes, if you have a food processor it's really easy. Finely chop up basil and oregano. Chop up scallions. In food processor add salt, pepper and olive oil. Toss well. If you don't have a food processor you can just chop everything up by hand and put it in a bowl.
I use flatbread for my bruschetta, but you can also use toasted rounds of Italian bread. If you wnat it fancy, pre-heat oven to 400. Ladle spoonfuls of bruschetta onto bread rounds, top with some mozzarella or parmesan and bake for a few minutes till cheese melts. Yum. It's delicious and trust me, very healthy. (If you wish use the flatbread, it really is great)
Thai chicken wraps --
My own receipe. You'll need peanut and teriyaki sauces most grocery stores have this in the ethnic foods section, get the lower sugar sauces.
1/2 pound chicken strips uncooked
1 tblspn olive oil for sautee-ing the chicken
1/2 cup unsalted peanuts
1/2 cup shredded carrots
several leaves of your favorite lettuce, romaine, butter, whichever, washed and patted dry. They are the wraps so don't chop them or split them into.
Sautee chicken in pan with olive oil, add teriyaki sauce and simmer, add about a tablespoon of peanut sauce. Cook till brown and done all the way through. Set aside to let cool.
In food processor, chop peanuts. Shred carrots place together in a bowl. Now chop up chicken into cubes and place with carrots and peanuts. Heat 1/2 cup of peanut sauce and teriyaki sauce together in a pan and let simmer. Stir well, pour this over the chicken carrots and peanut mixture and toss.
Two or three tablespoons of this wrapped in a piece of lettuce is absolutely delicious. Nice and spicy (peanut sauce is spicy by the way) Now enjoy!
These are much healthier than chips and dip, believe me. Enjoy!
