Good Stuff to Eat Extremely Nice! Lol

Thought you'd like a good recipe and an easy one.

I have two friends who are writing a cookbook with me and one of our sections is "Dinner for One" and I think it's going to be good.
For this you'll need:
1 nice rib eye or new york strip steak
or 1 nice plump chicken breast
assorted vegetables including portobello mushrooms, onions and peppers
shaker style parmesan (grated)
blue or gorgonzola cheese crumbles if you wish
sundried tomatoes if you wish
butter/olive oil
condiments
A nice red or white wine!
Pamper yourself!

Steak or chicken breasts will be fine for this recipe, I just happen to like an occasional steak.

Rub your steak or chicken with olive oil, salt (not too much) pepper, oregano and some nice garlic. Let it set for about an hour.

Turn on your broiler and make sure you have some parmesan cheese (the sprinkle kind) sitting close at hand.

Meanwhile, you'll need some nice veggies, so If you buy rosemary or grow it, you know that the rosemary has some pretty sharp little steams. If you pick the leaves off of the rosemary, it makes excellent skewers and the flavor of the rosemary goes through whatever you skewer it into. Otherwise, just use regular skewers.

Cut up large portobello mushrooms, some nice sweet onions, peppers an/or squash. Soak them in olive oil, salt pepper, oregano and garlic. Let sit for at least 1/2 hour.

Skewer these onto the wooden or rosemary skewers. Set aside. They cook quickly, so you need to cook them last.
You still want them a bit crunchy when you serve them.

Turn your oven on broil, put the tray/shelf on the bottom rung of the oven.

Put your pan in the oven that you intend to cook on. Let it heat and get hot before placing your chicken or steak on it. This helps brown the meat.

Put in meat -- let cook for about 5-7 miuutes on one side.
Open door and sprinkle with parmesan.
Let cook 5 more minutes, then flip over.
Repeat what you just did.
Take out meat according to thickness and whether you like it medium rare, medium, well, etc.

Let meat set for a few minutes. Meat will continue to cook.
Put in skewered veges. Broil them till they are browned slightly.

Mix 1 tblspn olive oil and 1 tablespoon butter (I use the butter that fights high cholesterol). Heat in microwave.

Arrange steak on plate (remember you are pampering yourself) Add skewer of veges. Crumble blue cheese or Gorgonzola over your steak or chicken if desired and add sliced sundried tomatoes. Pour olive oil butter mixture over this and pour the wine.

Light a candle if you wish and enjoy. This meal is low cal, low carb and absolutely delicious beyond belief. Olive oil is the best oil for you!

Now enjoy your meal with a nice candle and some relaxing music. Time to pamper yourself.
