Zucchini Recipes

I was going to post some zucchini recipes, but as far as I'm concerned, the best and probably only way to fix zucchini is to saute it in olive oil until all the pieces are limp and some of them are browned and maybe even slightly charred. Add salt and pepper.

The recipes I was looking at were zucchini boats stuffed with sausage, covered with salsa and melted cheese. I can think of a lot better things to do with sausage. Then, I considered recipes for zucchini brownies, zucchini cookies, and chocolate zucchini bread. There again, I'm not a big fan of those recipes. Of course, at my high altitude here I don't get a lot of output from my zucchini plant, so I don't have an over abundance of them to deal with. I will say this: zucchini in a chocolate cake or brownie shows as green flecks that look like pistachios, so it's not the worst thing in the world.



My zucchini plant is just about done for the season: the leaves are turning yellow and there are hardly any blossoms coming along. I harvested only two fruits from it, and you see one of them in the photo. One end was big, and the other end was small, more like a gourd. Next year I'll plant two different kinds of zucchini and see how that does.

zucchini frittata:

Ingredients

* 1/2 cup chopped onion
* 1 cup shredded zucchini
* 1 teaspoon cooking oil
* 3 eggs, beaten
* 1/4 teaspoon salt
* 1 cup shredded Swiss cheese

Directions

1. In an 8-in. ovenproof skillet over medium heat, saute onion and zucchini in oil for 2-3 minutes. Pour eggs over top; sprinkle with salt. Cook until almost set, 6-7 minutes. Sprinkle with cheese. Bake at 350 degrees F for 4-5 minutes or until the cheese is melted.
2. Mangia! (Frittatas are Italian omelettes)

Have you ever done 'courgettes' on pasta dishes? Courgettes are the yellow-gold flowers of the zucchini.

I didn't realize that was the official name for the zucchini blossoms. I thought courgettes was what the English people call zucchini, but now that I think about it, I also thought when Hercule Poirot was out in his garden tending his marrows, I thought marrow was their word for zucchini.

I love zucchini bread. When Celeste was in the hospital after her car wreck, I kept them supplied with it.

I got really burned out on zucchini bread back in the late 70s when Mr. Troutbend's mama inundated us with it. Now she's gluten free, so we can breathe a sigh of relief.
