I pulled down one of my cookbooks, and it's bristling with Post It notes marking recipes I thought sounded good. There are several recipes on each marked page, so hard to tell what caught my eye, but here are some of them:
I'll try this first one as-written, but if I was doing it, I would have mixed the eggs into the cottage cheese and made that its own layer (like lasagna). But what do I know? Maybe this way is what makes it so special.
Special Casserole
2 cups uncooked noodles
1 medium onion, sliced
1 pound ground beef
2 tbsp butter
1 cup cottage cheese
1 cup milk
1 can cream of mushroom soup
1 tsp salt
1/2 cup grated American or cheddar cheese
2 eggs, beaten
Cook the noodles until tender in boiling, salted water. Drain. Cook onion and beef in butter until lightly browned. Add the cottage cheese. In a 2 quart casserole, put 1/3 of the noodles and then a layer of the meat mixture. Repeat, and end with a layer of noodles. Combine milk, soup, and salt and pour over the layers. Sprinkle with grated cheese. Beat eggs and pour over the cheese. Bake, uncovered, for 1 hour at 375 degrees (191 C). Makes 6 to 8 servings.
Hungarian Pork Chops
6 pork chops
1 cup onions, sliced
1 clove garlic, minced
2 tsp dill weed
1 tsp caraway seed
1 tsp paprika
1/2 tsp salt
1 cup water
1 cup sour cream
Brown the pork chops in a small amount of hot shortening. Add onion, garlic, spices, salt, and water. Cover and simmer until chops are tender. Remove chops, drain excess fat from the skillet, saving the onion. Stir in the sour cream. When piping hot, pour over the chops. Serve with hot biscuits or hot cooked rice. "This is a marvelous combination of flavors and makes a gourmet dish out of pork chops."

This next one is a Waldorf salad made with cream cheese and piled onto slices of jellied cranberry sauce. I know for sure that Mr. Kitchentales would not like this arrangement: he would like the apple salad separate from the cranberry sauce. I might try it, though, just for the cream cheese with the apples.
High Top a Mountain Salad
1 cup apples, diced
1/2 cup celery, diced
1/2 cup cream cheese, cubed
1/2 cup nuts,
1/4 cup mayonnaise
2 tbsp cream
1 (16 oz) can jellied cranberry sauce
Combine all the ingredients except the cranberry sauce. Get the sauce out of the can (cut an air hole in the closed end) and cut into slices that you put onto lettuce leaves. Mound up a mountain of the apple salad on to the top of each cranberry round. Especially nice with holiday meats.
