Pork and Sauerkraut

Now that it's September, Octoberfest isn't so far away. You could use beer for the liquid, don't dump in the whole bottle, save some to drink.

Pork with Sauerkraut

1/2 onion, sliced in those wedge shapes
1 apple, unpeeled, cut into 1/2 inch or so slices
Salt and pepper
1 can sauerkraut, drained and rinsed
1/2 cup dry vermouth, or white wine or chicken broth
Country-style pork ribs, or shoulder roast cut into 2 inch pieces

Put the onion and apple in the slow cooker, sprinkle with salt and pepper. Cook for 45 minutes to an hour until you can smell the onions cooking. Pour in the sauerkraut and wine or other liquid. Put the meat on top. Cover and cook a couple of hours, then give it a stir so the meat is submerged. (This is optional if you are going to be gone all day.) Anyhow, cook it 6 to 8 hours until the meat is tender. Taste and add more salt and pepper to suit your taste. Serve over (homemade) mashed potatoes.

My dad enjoyed sauerkraut, stinky cheeses and kippers. There were some nights our house just wasn't livable.

There is some kind of cheese from Wisconsin that they take outdoors to cut up, because it smells so bad. I was at a party once where there was some, and I remember the people talking about taking it outside, but can't remember what it tasted like. I think they said it didn't taste as bad as it smelled, but I find that hard to believe.
