I had a chicken breast and a chicken thigh, fed the skin to the fox, and then what to do with the meat? I found a recipe that called for capers, of which I have none, so I put some finely diced dill pickle in the sauce, and that gave it a nice twang. You could put pesto in the sauce and it'd be lovely. One thing, and it's up to you, but I was glad I didn't add cheese to it - I was taking a vacation from cheese.
Chicken with a Cream Sauce
2 tablespoons finely diced onion
1 tablespoon butter
2 tablespoons olive oil
Boneless chicken meat, cut into 2 inch or so pieces
Salt and pepper
1 teaspoon minced garlic
1 tablespoon flour
1/2 cup heavy cream
1/4 - 1/2 cup Greek yogurt
2 tablespoons finely diced dill pickle
2 tablespoons fresh basil, minced
Use a 12 inch skillet to sauté the onion in the oil and butter until transparent. Add the chicken pieces that have been seasoned with salt and pepper and cook over medium-low heat, stirring frequently, so the onion doesn't burn. When the chicken is almost done, stir in the garlic and cook briefly but don't let it get too brown. Remove the chicken, onions, and garlic to a plate and cover with foil to keep warm.
Stir the flour into the skillet and cook briefly. Stir in the heavy cream, and cook until reduced in volume and thickened. Put the yogurt into a small bowl and stir in a little of the cream to heat it up. Put it into the skillet with cream, and cook gently until warmed though. Stir the chicken into it, and cook gently until hot enough to serve, but don't let it boil. At the end, stir in the pickle and basil. Serve with angel hair pasta and broccoli.

I made these snickerdoodles the other day, a different recipe in that it calls for brown sugar.
Snickerdoodles
1 cup packed brown sugar
2 eggs
1/2 cup butter
1/2 cup shortening (can substitute butter)
1 cup sugar
2 teaspoons vanilla
3 1/2 cups flour
2 teaspoons cream of tartar
3/4 teaspoon salt
2 teaspoons baking soda
Cinnamon-sugar
Cream brown sugar, butter and shortening, eggs, and 1 cup sugar. Add vanilla, mix well. Sift dry ingredients together (we don't sift and it's okay). Add mixed dry ingredients to wet mixture, and beat well. Shape into 1-inch balls. Roll in cinnamon-sugar mixture. Place on cookie sheet. Bake at 350 degrees for 10-12 minutes, or until lightly browned.
