Pork Chops and Green Beans

Sometimes you have people coming over and want to make something special, but not something that is last-minute fussy or will heat up the kitchen.

This pork chop recipe can be made with pre-cooked meat, such as slices of cooked pork loin. Just heat in the oven until the meat is warmed through and the cheese is melted, maybe 15 minutes. This is from All Recipes, and one of the reviewers said it works for her Atkins diet.

Baked Pork Chops with Cheese
4 boneless pork chops
1 teaspoon seasoned salt
1 teaspoon garlic powder
1 teaspoon dried parsley
4 teaspoons butter, softened
4 teaspoons mayonnaise
1 cup shredded sharp Cheddar cheese

Preheat oven to 350 degrees F. Place pork chops in a baking pan. Spread 1 teaspoon of butter over each chop, then spread 1 teaspoon of mayonnaise over butter. Season each one with seasoning salt, pepper and parsley. Sprinkle 1/4 cup cheese over the top of each pork chop.
Bake 35 minutes in preheated oven, or until internal temperature of the chops has reached 160 degrees F.



This is a family favorite. Very good made ahead and heated up. Also good cold, like an antipasto.


Olive Oil Green Beans

Diced onion
Olive oil
Salt
Canned green beans, not French cut
Fresh tomato, diced medium (or canned tomatoes, drained and cut up)
More salt and pepper to taste

Saute the onion in olive oil with a little salt until tender. Stir in the green beans and tomatoes, and simmer 10 to 15 minutes to heat through.


Can't wait to try this.



Oreo Ice Cream Dessert

1/2 (15 oz) package Oreo cookies, crushed
1/4 cup melted butter
1/4 gallon softened ice cream
1/2 cup Spanish peanuts

Topping:
1 cup brown sugar
1/2 cup chocolate chips
1/3 cup evaporated milk
1/4 cup butter

Mix the cookies and butter and pat into a 9 by 9 inch pan. Chill for 1 hour. Spread with softened ice cream and sprinkle with peanuts. Freeze until firm and cover with topping. Topping: boil all ingredients together for 8 minutes, stirring often. Cool and pour over the ice cream. Freeze again until firm.

I decided with today's leaner pork chops, it's important to soak them in a salt brine for 30 minutes before cooking.

Don't know when. I have often dreamt of a road trip where I visited around the country, cooking dinner for people, and learning their recipes. Wait till you taste Jeri's cooking, you'll want to kidnap her.
