Olive Salsa, Try It.

I know, you all are saying What? More dip recipes? These are a little different, don't have cream cheese or sour cream.

1 bunch green onions, white part and tops chopped
2 tomatoes, chopped fine
2 cans chopped or sliced black olives (3 to 4 oz size)
2 cans chopped green chilies (3 to 4 oz size)
2 tablespoons (or less) oil
2 tablespoons vinegar (maybe red wine vinegar if you have it)
Salt if needed

Mix it all together and serve with tortilla chips.

Easy Fruit Salsa

Prepared Salsa from the store, I use medium hot
Crushed pineapple or canned peaches diced

Mix together and serve with tortilla chips. The fruit cuts some of the heat, and makes a nice change of flavor.

Here's a hot artichoke dip that doesn't have very many ingredients.

Hot Artichoke Dip
1 cup mayonnaise
1 cup Parmesan cheese
1 (8 oz) can artichoke hearts, drained and cut up
Garlic to taste
Salt to taste
Mix all ingredients and bake in a 350 degree oven for 20 minutes, uncovered. Serve with crackers or French bread cut into fingers and toasted.

I really like hot dips, and you know what else? Putting them in a hollowed out loaf of bread. Makes me want to join a church just to have an excuse to go to potlucks. Forget what they believe in, just so they have good food traditions, so Lutherans might be the best.

That olive one is making me think of bruschetta, something to spread on bread for a pick-me-up. As if we need a pick-me-up.

Well, at least I have the ingredients. But salsa from a jar is sure simpler!

It really is simpler. Once in awhile I buy some fresh cilantro and chop up some fresh tomatoes to mix with a little of the jar salsa for a fresher flavor.
