Melty Chocolate Peanut Butter Cake

Single-Girl Melty Chocolate Peanut Butter Cake
[or Melty Chocolate Bourbon Cake]
Serves 1

1/2 tsp butter
1 tsp unsweetened cocoa (for dusting the pan) or use flour or sugar
1 tbsp butter
1/4 cup semisweet or bittersweet chocolate chips
1 large egg
4 tsp sugar
1 tbsp peanut butter (natural preferred) OR 1 tbsp bourbon
Pinch of salt
1 tsp flour

Preheat oven to 375 degrees and set a baking she on a rack in the center of the oven. Grease a 3/4 cup ramekin with 1/2 tsp butter, then dust with unsweetened cocoa. Set aside.

Put 1 tbsp butter and the chocolate chips in a small heatproof bowl set over a small pan of simmering water. Heat, stirring until the chocolate melts; let cool a few minutes.

Whisk egg, sugar, and peanut butter (or bourbon) in a small bowl to blend. Whisk in chocolate mixture until well incorporated, then stir in salt and flour until just combined. Pour batter into the ramekin and set on a baking sheet and bake until as done as you like - 7 to 10 minutes for a molten center (A 3/4 ring around the edge will look dull.) Or 10 to 12 minutes for a soft center (cake edge will puff slightly).

Let cake cool 2 minutes. Protecting hands, invert onto a plate and eat right away.

I've always wanted a recipe for this type of lava cake, but never got around to tracking one down. I'll have to try it and call it supper.

I have a feeling the first time it's made is a little tedious, but after that, a person could do it almost in their sleep (using the microwave to do the melting) when the late-night need for a pick-me-up strikes. Fortunately for my waistline, I'm not one of those people who is simply transported over the moon by chocolate. It's okay, but doesn't define my existence. Maybe this recipe will make a believer out of me.
