Highly Recommended: Brisket in Beer

I don't always share what was for dinner with you all, but this was tonight, and it was very, very good. I used Blue Moon Pumpkin Ale for the beer. Serve with noodles or mashed potatoes.

Beef Brisket with Beer
1 (4 pound) beef brisket, trimmed of fat
salt to taste
1 large onion, sliced
1 (12 fluid ounce) bottle ale (like Blue Moon Pumpkin ale)
1 tablespoon brown sugar
1 cube beef bouillon
1 teaspoon coarsely ground black pepper
2 teaspoons minced garlic
1 bay leaf
1/4 teaspoon dried thyme
2 tablespoons cornstarch
2 tablespoons water

Preheat the oven to 350 degrees (or use a crock pot). In a skillet, sear the brisket on as many sides as you can until browned. Season with salt, and place in a baking dish or crock pot. Salt it and cover the entire roast with onion slices. In a medium bowl, mix together the beer, brown sugar, beef bouillon, pepper, garlic, bay leaf, and thyme. Pour over the roast. Cover with aluminum foil if baking in the oven.

Bake for 4 hours in the preheated oven, 4 to 6 hours on high in the crock pot. The brisket should be fork-tender. Remove it to a covered plate to rest for 10 minutes. Mix together the cornstarch and water; stir into the juices (in a saucepan) and heat, stirring, until it thickens. Remove the bay leaf. Slice and serve the meat with the sauce.

I was surprised at how good it is, so much flavor, and I didn't have to slather it with barbeque sauce or Liptons Onion soup.
