Creamy Tofu Salad

From Gourmet magazine. This looks like egg salad. Make it into a sandwich, but be sure to cut the crusts off the bread because it's 'gourmet.'

1 (14 oz) package firm tofu, rinsed and drained
1/2 cup mayonnaise
1 teaspoon fresh lemon juice
1 teaspoon turmeric
1/2 teaspoon dry mustard
2 celery ribs, finely chopped
1/4 cup chopped fresh chives
1/2 teaspoon salt, or to taste
1/4 teaspoon black pepper to taste

Sandwich bread, lettuce, sliced tomato

Finely mash the tofu with a fork in a bowl and then let it drain in a sieve set over another bowl, about 15 minutes. While the tofu drains, which together the mayonnaise, lemon juice, turmeric and mustard in a bowl, then stir in the tofu, celery, chives, salt, and pepper.

I have never eaten tofu but might try this recipe.

It's mainly for Kristilyn, and is actually a vegan recipe because it doesn't even have eggs. I might try it using eggs instead of tofu to just see how that works. The picture in the magazine looked so good. Come to think of it, I'm going to go boil some eggs right how.
