Confetti Buns

I had this packet of spinach dip mix - Popeye's Passion - all it needed was sour cream to make a marvelous dip full of carrots, spinach, celery, onions, and other flavors.

But I didn't have sour cream so I stirred it into cottage cheese. It was really good, but I didn't want to eat it all as dip, so I made hamburger buns and put it in the dough. It's similar to the dilly bread that has cottage cheese in it, but the buns have a better texture than that.



Confetti Buns

3/4 cup cottage cheese
1 package dry soup or dip mix
2 packages yeast in 1/2 cup warm water
1 cup boiling water
5 tablespoons shortening
2 eggs
1/2 cup sugar
2 teaspoon salt
3 cups flour
2 cups flour

Dissolve the yeast in the water and let set for 5 minutes. Put shortening into large mixing bowl. Add the boiling water. Mix until shortening is melted. Add cottage cheese mixture, eggs, sugar, salt, 3 cups flour, and the yeast mixture. Beat with mixer for 3 minutes. Add the 2 cups flour and stir by hand until completely mixed. Cover and place in the refrigerator for at least 2 hours. Not more than 4 or 5 days. Form into hamburger buns. Place in greased cake pan and let set, covered for 3 hours at room temperature. Bake 20 minutes at 350 degrees or until lightly browned.

They came out really soft and billowy, but stood up well to pot roast sandwiches, so that's what counts, I guess. I don't know where I'm going to get more of that dip mix if I want to make them in the future, but am thinking that onion soup mix in the cottage cheese would work.
