Almond Fruit Salad

Serves: 4

2 cooked brown rice, cooled to room temperature
1 orange, peeled and sliced
1/2 cup red grapes, halved
1 kiwi, sliced
1/3 cup slivered almonds, toasted
2 tablespoons orange juice
1 tablespoon soy sauce
2 teaspoons vegetable oil
1/4 teaspoon minced fresh ginger
Instructions
Combine rice, orange, grapes, kiwi fruit, and almonds in large bowl. Blend orange juice, soy sauce, oil and ginger in small bowl; pour over rice mixture and toss lightly. Prepared poppy seed dressing may be substituted for dressing.

I'm shocked at the amount of sweetener in this cucumber dill salad. I've never made it with any kind of sugar or other sweetener, so will have to try it next time I have cucumbers and sour cream, just to see how it is. If you don't have stevia sweetener, you could use sugar just to get the general idea.

Sweet Cucumber Dill Salad

Serves: 8
Chilling Time: 1 hr
Ingredients
2 cucumbers, peeled and sliced
1/4 cup onion, thinly sliced
1 cup fat-free sour cream
2 teaspoons dill weed
1 cup Splenda

Combine sour cream, Splenda, and dill.
Add cucumbers and onions.
Refrigerate for an hour to allow flavors to blend.

Serving Size: 1/8 of whole salad

We used to slice onions and cucumbers into a vinegar and water solution and
add the tiniest bit of sugar and let them set. I always liked it. I have
eaten the cucumber-sour cream without the dill and I think the dill would
add a really good punch to the dish.

I usually put the sliced cucumber in a colander, salt liberally, and let drain for an hour or so, then rinse them off; it makes them crisper. I'm going to add some sugar next time to see what it's like.
