I hope you realize that I don't endorse every recipe I post here. Some of them I post because I want to share something that strikes me as over the top. This recipe falls into that category. According to the blurb, restaurants are starting to feature this kind of sandwich in competition with the Egg McMuffin. I'm sure it's very tasty, but not low fat by any means. It was the hash brown patty that did me in.
Waffle Breakfast Sandwich
Serves: 1
2 cooked waffles
2 eggs cooked to your liking
2 strips cooked bacon
1/2 cooked hash brown patty
Maple syrup, to taste
Butter both sides of waffles. On a griddle over medium-high heat, cook 1 minute, or until golden and hot. Remove from heat. Add eggs,bacon, and hash browns. Drizzle with maple syrup and close sandwich.
Now for something completely different, and this one sounds better to me, but it falls into the high calorie category, so I'll probably never make it.
Yesterday on America's Test Kitchen they made crispy French fries starting with cold oil.
Crisp French Fries
2 pounds Yukon Gold potatoes
6 cups peanut oil
1/4 cup bacon grease (for flavor)

Don't peel the potatoes. Cut a thin slice off each side of the potatoes, then cut 1/4 inch slices, and then cut into 1/4 inch thick strips. Place them in a large heavy Dutch oven, such as Le Creuset. Pour in the oil and add the bacon grease. Bring to a boil and cook for 10 minutes (if I remember correctly) until the outsides set. Do not stir. Now stir them, loosening any that have stuck to the bottom of the pan, and turn down. Cook until done in the center. Drain on paper towels and season with salt.
The idea is that they will have developed a crisp crust so they won't break into pieces when you stir them. This doesn't work with sweet potatoes or russet potatoes.
