We have some nice kosher hot dogs. Last night I made corn meal biscuit dough to wrap around sections of the hot dogs (pigs in blankets) and it was like corn dogs, baked instead of fried. The dough is from America's Test Kitchen, and is excellent just as biscuits.
Corn Meal Biscuits
3/4 cup buttermilk **
1/2 cup corn meal
1/2 tablespoon honey
1 cup flour
1 1/2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
6 tbsp butter, chilled and cut into small cubes
Flour for the board
Combine the buttermilk, corn meal, and honey and let stand 10 minutes. Combine the dry ingredients in the food processor bowl. Add the butter and pulse to the consistency of coarse crumbs. Add the liquid ingredients and pulse just briefly. Turn out onto a well-flowered board and knead lightly "until it has some structure."
Pat out to about 3/4 inch thick and cut with a biscuit cutter. You may need to use a little extra flour to coat it for handling. Place on greased baking sheet and bake 5 minutes in a preheated 450 degree oven, then turn it down to 400 degrees and bake 8 to 12 minutes more.
Pigs in blankets: I found it to be a very soft dough and I rolled it lightly in flour to coat the outside so I could handle it to wrap it around 2 inch long pieces of hot dog. Follow the same baking directions.
** I put dry buttermilk in the flour mixture and used water in the first step.
Another meal accomplished. Now what about tomorrow? I have some deli-sliced cold cuts, so maybe it will be chef's salad using romaine and spinach for the greens. We were at a truck stop today and the guy at the next table was served a big bowl of salad topped with two scoops of tuna salad. It looked really good.
