Low-fat Zucchini Bread.

Did I ever tell you that baking is my therapy.
Love to bake and face the challenge.
With Chris Botti supplying the music for me.
So soothing.
Not what the Zucchini is in full swing and this is one
of my favorites.
May have put this on before.


Low Fat Zucchini Bread.
1(8oz.)carton egg product,equivalent to 4 eggs
(I use Egg Beaters)
1/2 c.melted touch of butter spread.(I use olive oil)EVirgin
1 tbs.vanilla
2 c.sugar(I use Splenda)just under one cup

3.cup of flour
1 tsp.baking powder
1 tsp baking soda
1t tsp.salt
2 tsp.cinnamon
2.cup.grated zucchini with skin.
I squeeze the water out of them before mixing it.

OPTIONS:
3/4 c.chopped nuts.(this I use)
1/2 cup or raisins.
Sm.can crushed pineapple

Beat egg,oil,or butter,and vanilla
Add rest of ingredients and mix well.
Pour in greased loaf pans.
Bake 60 min.at 350 degree(check them out at 45 min)
Makes 2 loaves.


I just took them out and they are cooling at this time.
Looks wonderful.

I used to bake Zucchini Bread. It happened the summer that I got mixed up while planting and put in four hills of zucchini and only two of cukes. I grated them with a hand grater, toweled out the moisture, and froze them in 2 cup measurements. We had zucchini Bread all winter! I used yellow raisins and also added ground allspice. Yours looks so yummy, I could go through the screen after it!
