Today there are more than one million Americans with severe peanut allergies. But it wasn't always "eat a goober, go to the hospital." What changed? The way we process peanuts, according to Sheldon Spector, M.D., a clinical professor of medicine at UCLA. "Peanut allergies are more common in the United States, but they eat a hell of a lot of peanuts in China, so the theory is that the way we process them and the way we roast them may bring out the allergen potential."
That's the likely "why" behind the reactions; here's how some of them may be prevented in the future.
In a 4-month study published in the New England Journal of Medicine, researchers discovered that when an anti-IgE treatment was given to allergy sufferers, their tolerance for peanuts rose from half a peanut to an average of nine. More research is still needed, but in the meantime, Scott Sicherer, M.D., of the Jaffe Food Allergy Institute at the Mount Sinai school of medicine in New York City, recommends being careful when eating in restaurants that serve Chinese, Thai, and other Far Eastern cuisines; the cooks may use the same wok to make more than one dish, allowing peanut oil to leach into your food.
